This simple recipe is a great base for you to get creative! You can add beans, veggies, even bacon- whatever you like in your tomato soup! As is, this is an easy classic perfect with a warm, cheesy grilled cheese on a rainy afternoon!
Whenever possible I make tomato-based recipes with just tomatoes, nothing canned or processed. Roma tomatoes have tons of flavor (especially in the summer), just make sure you get all the juice into the pot when cutting them!
If you want a creamier soup you can just throw this in a blender and puree it (adding more soymilk will make it creamier too, as will parmesan if you’re not vegan).
